If there is one cake that epitomises Lindy’s work it has to be the Wonky Cake. Which might just explain why this course is so popular and gets booked up faster than any other course. It’s a fascinating course to observe. The pace is fast because there is a lot to get through in one workshop day. Oh and the process is very very clever. You need a lot of cake and the cake is cruicial for the Wonky. Our colleague Jane was a student on the course today (in the pink pinny!) and really has mastered the art of baking the perfect Madeira cake. See her blog for tips on this. Your cake needs to be dense to cope with the carving and the multi layers of this cake. The carving stage takes the longest and patience is required but Lindy and Sally are on hand every step of the way. It’s not easy getting the shaping right but the students did very well… touch up’s…what touch up’s!! This is not a course for the beginner sugarcrafter, you really do need to come armed with some knowledge and experience of cake carving. Which is why I haven’t done a Wonky and probably won’t for a very long time! All jokes aside creating a Wonky cake is a fantastic achievement and today’s students worked hard and turned out some great work.
We don’t often have the luxury of time to adorn the Wonky cake on a one day course. But then that’s the great thing about sugarcrafting you can walk away and work on it later. We had some great feedback from our students on this iconic cake. Some thought it was harder than they expected, some thought easier and most said they would give it another go! Fantastic… job done!
