With our insatiable desire to do something different for a wedding, the wedding cake is sharing centre stage these days. Wedding ‘favours’ have become very popular. Lindy’s Designer Wedding Cookies make stunnning wedding favours. Placed in clear cellophane bags and tied with ribbon, they are a stylish, delicious treat… a work of art to take away to remind you of that special day. This course will give you all the techniques you need to create your own or make them for someone else. Stunning results are not that difficult to achieve, once you know how that is! Enter Lindy Smith…Lindy will guide you through tips on baking the cookie, rolling and placing the sugarpaste, followed by the decoration. We focused on stencils, embossing, stripes, cutout flowers, piping work and the use of lustre dust. Based on Lindy’s ‘bake me I’m yours…cookie’ book, the wedding cookie designs are universal in their appeal. Small in size, huge in statement!
What a hoot we had today! A super group of students who chatted and laughed while creating and learning. And that’s how it should be.
One student Jane Staunton sent us this message…

Hello
can you tell me how you store cookies when they have been covered please, as i know the biscuits themselves need to be airtight to keep them crisp however, if the sugarpaste is kept airtight it stays moist and im concerned this will effect the crispness of the biscuit ???
thanks

Hello Shelley,
We like to place our decorated cookies in cookie bags. Sugarpaste does soften a cookie a little but we suggest that you let the sugarpaste crust over before placing into the bags. Commerial cookies are dried before being stored which is why they are so hard to eat!! We actually prefer the softer bite of a home made and decorated cookie.
