It’s the ultimate cake course, the one that many followers of Lindy’s work aspire to…… to carve or not to carve – that is the question!
What a great day this Wonky class had. Lindy and the team were able to move through the stages of this course quite quickly because the students attending were competant sugarcrafters. The wonky cake is not a beginners cake, it takes a good degree of carving and sugarpaste handling confidence. That is not to say that our students arrive nerve free! But armed with the basics you really do leave this course achieving a whole new level of sugarcraft cake design.
Lindy has devised an excellent process of teaching the ‘carving’ of the Wonky cake. There are some tricky angles to master on this cake but when you have the knowledge it becomes less scary. Of course with Lindy, and the team, on hand you are never alone on a Lindy’s Cake course!
The results speak for themselves. There is a lot to achieve in one day on this course and many cakes go home covered in sugarpaste but not adorned! But as one student said to me ” The great thing is that when I get home, after a break and some supper, I can put all the finishing touches to my Wonky, the drive home gives me the chance to think about the finished design”. A positive attitude indeed!!

The Wonky course was such fun. I was nervous to begin with but it was explained it such easy steps, and help and advice was always nearby. Fantastic day.
I have a couple of questions, the white M & B icing on my bottom cake became very soft after a week. I’m planning on doing a wedding cake soon, should i put anything with the icing to ensure it hardens. Also I want to do a cake topper with the wires and butterflies on the ends, what size wire do i need?

Regards the soft sugarpaste, I suggest that a little gum kneaded into the paste will help. Regards wires I would recommend the 24g floristry wire
