Introduction to Celebration Cakes Feb 2011

Introduction to Celebration Cakes is our absolute favorite workshop…we never leave this popular course off our workshop programme because it is just too fabulous!  Time and time again we are told that even if you have some sugarcraft experience, this course is fantastic for perfecting the finish of your cake and for picking up hints and tips that will become invaluable! I think our cake friend, and serial workshoppper, Julie Marney summed it up perfectly recently  “Cannot recommend this course enough – I loved it!  Had been decorating cakes for friends and family for a little while, but could never get a good finish so went along to learn the tricks of the trade and came away learning those and so much more! ”

Ultimately this course is for the beginner. Lindy goes right back to basics starting with the covering of the board. She will then move on to the cake, focusing on the baking of the cake. Lindy firmly believes the cake has to taste as good as it looks. She will share recipes and baking tips to help you achieve not only a cake that is suitable for covering, but a cake that is moist and tastes delicious. You will then move on to the covering of the cake with sugarpaste concentrating on a smooth finish. Finally you will decorate your cake, the really fun part! Today we used stencils, impression moulds and a sugarshaper. Lindy will show you some simple but very effective techniques that will transform your cake into something quite lovely!

Lindy had a challenge today, a birthday cake request from her son for his 16th birthday! Wow… imagine having Lindy Smith as your mother! And look what she created for him…but there’s more to this cake than meets the eye…for underneath this stunning cake is the most decadent, and utterly morish, chocolate fudge cake ever!

    Sending out a very big thank you to Lindy & all the team (Jane, Sally & KiwiRachel) for such a great experience – it really was a pleasure taking part in the workshop on Friday and I learned so much throughout the day. Lindy is a great tutor, and nothing was too much trouble for any of the staff – it was a truly welcoming & friendly atmosphere. Very much looking forward to my next one! Clare :o) x
