If there is one cake that epitomises Lindy’s creative style it’s the Wonky Cake. It features on our logo, it gets the most ‘oohhhs’ and ‘ahhhhs’ when on display at cake shows, it even stars in it’s own DVD ‘Lindy’s Wonky Celebration Cakes‘ This is surely Lindy’s ‘celebrity’ cake and we love it!
Cakefriends, today was a ‘Wonky’ workshop day and what a super day it was too. Seven eager sugarcrafters gathered in Buckinghamshire to learn the method of creating this iconic cake a la Lindy Smith!
I have to be honest this it is not the easiest of classes, which is why we encourage our students to have carved at least one cake before, and to be very comfortable with using sugarpaste. Lindy has devloped a superb step by step method of teaching the carving and covering of this shape. And having Lindy and the team on hand to guide you on the day is invaluable. Lindy briefly touches on sugarcraft basics in this class, then spends a little more time talking about the baking of the cake and making it suitable to cope with the carving and covering of this shape. Lindy used an ‘orange & poppy seed’ cake, from her book ‘bake me I’m yours…cupcake celebration’ , for the large tier and a ‘chocolate fudge’ cake for the top. She then used ‘impression moulds’ for the decoration. Today our students created a 2 tier cake, because of time limitations, but Lindy would usually create this ‘Wonky’ cake with 3 tiers. However you will leave this class with all the ‘method’ tools you need to get stuck in at home and create this wonderful querky cake again! This cake is definately a ‘I can’t believe you made that cake’ kind of cake!
Our students did a great job today. They all carved the ‘Wonky’ shape very well and have adorned their cakes in a colourful selection of pastes and flowers. Many will be finishing their cakes off at home…because 4pm comes around very quickly!! But I think they should all be very proud of what they achieved today.

Hi Lindy, I’am a huge fan of your cake decorating, and Please i need your help, I am making Valentines Cookies and i use your recipe spice orange and Vanilla cookies, but after the 30′ in the fridge,when i roll the dough out it breaks, could you please tell me what i did wrong? thanks!

Great news that you are making the Valentines Cookies.
Lindy wonders if the dough is too cold, so suggests warming it up in the microwave for 10 seconds or kneading it a lot more before rolling it out.
