This will come as no surprise to our cakefriends…Lindy loves stencils! So much so that she created the ‘Stencil Technique’ workshop to devote a whole day to this stunning effective and, dare I say it, simple technique. Our students adorned cupcakes, cookies and a celebration cake today. With expert tuition by Lindy, and a step-by-step format, our students had time to experiment with different patterns and colours. Lindy is well know for her eye for colour so she was keen for our students to experiment with more than one colour and use colour blending. They also used royal icing and dusts to glittering effect
Moving on to the celebration cake part of the workshop we started with the stencilling of the board, top of the cake and then the seemingly daunting side of the cake! Lindy does have a canny way of making the impossible seem achievable! Here are the celebration cakes…wonderful!
We had a super day today! Our students worked really hard and produced some excellent work. Once again we were treated to a delicious lunch made by our friends at Whitewaters Deli & Cafe. It was fun to chat to our students on the lunch break, I love meeting our cakefriends and hearing about their passion for sugarcraft. We always come away with inspirational stories… mostly about cake!
This course is here to stay! Have a look at our workshop programme and do join us one day! It’s a super day out…I give you my KiwiRachel guarantee!!

hi lindy, i went to one of your stencilling workshops in feb and ive been asked to make some stencilled biscuits, is there a way that i can set the lustre dust so that it doesnt smudge or should i use royal icing instead?
Lindy Smith says
Hi Alia
I’d use royal icing and then, time allowing, mix some lustre dust with glaze and highlight parts of the stencilled pattern.
Hope your biscuits are a success

Hi Lindy,
My wife made some biscuits the other day with icing on top for our children which instantly reminded me of those Peek Frean’s biscuits I used to eat as a child. Her icing has exactly the same taste and texture! I still have a Peek Frean’s Playbox biscuit tin from around 1970 (see photo at website link) Any ideas how one could make a stencil of the figures let alone lay them on the first icing?
Cheers!
Timothy

Hi Timothy,
The biscuits your wife has made sound delicious.
Lindy’s new book (soon to be released): The Contemporary Cake Decorator’s Bible details how to make your own stencils.

We expect to receive this book in early October.
You could then make you own stencils of the figures on the tin.
Happy stencilling!

Hi Lindy
I fancy trying out using your stencils on celebration cakes, but have no idea how you do this. Can you give me a very quick idea of what is involved before I decide if I want to buy some? – I particularly like the designs on white sugarpaste, with blended colours highlighting the patterns (e.g. different colours for the flowers from the surrounding leaves; I think this might be using lustre dust from the bits I’ve read).
Thanks in advance
Jo

Hi Jo,
With a stencil you can create a beautiful cake that amazes everyone who sees it. You can either spread royal icing across the stencil and then lift, or as you say you can use different coloured dusts. You can even paint them. They are great fun.
Lindy’s new book – The Contemporary Cake Decorating Bible (due to arrive very soon) http://www.lindyscakes.co.uk/OnlineShop-Books.htm goes into great detail about how to decorate cakes and cookies using stencils.
May the cake be with you!
