When it comes to colour, pattern and design in cakes… cake couture… no one does it better than Lindy Smith. Always pushing the boundaries in her craft and creating new looks on a daily basis, she seems to have a never ending mental capacity to design. However, from these fabulous looks comes a simple starting point. Sometimes you need to go right back to basics in order to come out the other side with a glorious cake creation. This is the idea behind Lindy’s Introduction to Celebration Cakes class. Created, not purely for the novice, but for the sugarcrafter who simply wants that professional cake finish.
Whilst levelling, covering and decorating her cake, Lindy shares her baking tips and recipes. At every level the focus is on precision and finish. This class is designed in typical Lindy style, step-by-step and at a pace to suit all. With Lindy’s tuition and expert assistance from Jane and Sally, there is plenty of support for everyone. Everything you learn at a Lindy class will serve you well for years to come… and of course Lindy’s classes have the WOW factor too!
It’s a bluebird day here in Buckinghamshire and this class is buzzing. We are joined today by seven cake friends: Katherine, Helen, Donna, Gaynor, Patricia, Pamela and Paul, from all over the UK and everyone is a new student. The sunshine is obviously having an effect on our students colour choices… blues, greens, pinks and purples, not a nude in sight. Lindy will be pleased!
Looking at all the covered boards set aside for later Helen remarked how beautiful all the colours go together… Lindy always says there is inspiration all around us you just have to open your eyes to it. Go for it Helen!
We’re loving Gaynors enthusiasm for her new career. Like her divine chocolate orange buttercream, it’s a bittersweet time for her but we wish her the very best in getting her cake and sugar flower business flourishing.
Donna’s cake was made by her daughter… and she’s only ten! She has discovered a love of baking and bakes lots for her family. The cake looks fab. I think they should come on our next Mother and Daughter class!
Katherine is practising for her own wedding. Yes, this brave bride is going to make her own Wedding cake. She has told me some of her design ideas… all I am going to say is that it is inspired by a Lindy Smith design… and you wouldn’t usually associate it with weddings. Will the cake she creates today give us any clue as to what she might create come September… watch this space!
Our Jane has made a chocolate cake using Lindy’s recipe. The whole room is fragranced with cocoa. This sparked a conversation about chocolate, a topic most people love to talk about… and eat. Today I discovered that there is a company in Banbury called CALLEBAUT which manufacturers and distributes high quality cocoa chocolate. They have been crafting chocolate for 100 years. Lindy says it is the place to get chocolate if you are serious about chocolate. I’m off…
Once everything is covered Lindy demonstrates some simple, effective and stunning decorating techniques. Today she is showing our students how to stencil, use flower moulds and sugarcraft cutters. Lindy is using her own design ‘birdcage’ stencil for the top of her cake. For added interest she is making flowers using silicone moulds, and birds using sugarcraft cutters. On the Bluegrass and Gentian coloured sugarpaste they look sensational. Lindy has covered her board with Party Green with a touch of Bluegrass and Gentian added to make it blend and work well with the cake… a top tip.
Today has flown and in the last hour our students cakes are starting to come alive with colour and decoration. A super atmosphere and a super collection of cakes… well done, you’ve done a great job. Wish I could see the look on your loved ones faces when you show them
