Tips for using Royal Icing for Lettering and Run Outs

Royal icing is not a sugar medium I work with every day, but it is a form of icing that I have always loved using on my cakes. Royal icing is incredibly versatile and an excellent medium for adding decorative elements to cakes and decorated cookies, whether these be piped pearls, decorative scrolls or piped line work. It is also a very good option for adding lettering to cakes. I grant you it does take a little practice but once you are up to speed, it is actually a lot quicker than using either alphabet cutters or letter moulds to add names and messages to cakes.

Last week I ran a back to basics royal icing lettering class for a small group of students. We all had a thoroughly enjoyable day and my students went home with a set of new skills to add to their expanding repertoires.

Tips and Tricks for using Royal Icing

After the class I went onto Facebook Live to share some tips and tricks for using royal icing, I got such lovely feedback that I thought I’d share a copy of the Live video with you here.

In the video I mention the recipe that I always use, which is as follows:

Lindy’s Soft Peak Royal Icing Recipe

450g icing sugar
90g whites (white from about 3 eggs)
A few drops of lemon juice.
Put it in a mixer at the lowest speed for about 10-20 mins until soft peaks are formed as shown in the video.
