Lindy’s mini cakes decorated with delicate sugar snowflakes feature in Christmas Heaven magazine

I have been working with the lovely people from Food Heaven magazine, ever since they launched ‘Cupcake’  Heaven last autumn. The first magazine was a huge success and has meant that during 2012 they have brought us many more wonderful cakey publications –  ‘Baking Heaven’ and ‘Cake Decorating Heaven’ to name a couple. The magazines are always full of  tasty recipes and great ideas, so I was thrilled to be asked to contribute a feature on my mini snowflake cakes for the first ever ‘Christmas Heaven’ magazine.

I love baking at Christmas time, all those gorgeous aromas of spices, orange peel, brandy etc is truely delightful! It’s a time of year full of anticipation and seasonal tasty treats like traditional minced pies, chocolate yule logs and of course a Christmas cake that’s been lovingly nurtured, covered and decorated.  Of course when it comes to decorating a Christmas cake there are always many options, I must admit however that I do like a bit of snow with mine. Like  Bing Crosby I dream of a white Christmas,  but as we’re only lucky enough to get one  occasionally, I like to guarantee a few snowflakes by adding them to my cakes!

How to make my particular style of snowflakes has featured in two of my books – on a tiered cake in ‘Cakes to inspire and desire’ and on cupcakes in ‘Bake me I’m yours…cupcake celebration’. Here, however I have put them onto little mini cakes and used blue sugarpaste to help the snowflakes really stand out. I really enjoy baking and decorating mini cakes and often give them as gifts to family and friends – who do you know that would appreciate one this Christmas?
