Friday’s introduction to celebration cakes workshop was a great success -“I’ve had the best time ever”, “I’ve absolutely loved it”, “I’ve learnt so much” were just some of the comments from the students as they departed. For most students, covering and decorating a cake was a completely new experience, so they had a lot to learn.
As you can see below, they all did really well. The morning was spent getting to grips with colouring and kneading sugarpaste, covering boards, crumb coating cakes and of course the all important covering of the cakes themselves.
In the afternoon, I demonstrated a few decoration techniques, including edible ribbons and ropes, stencils and how to use different cutters to create on trend cut out flowers.
Stencils were a big hit with many of the students – as they easily turn a simple cake into an impressive masterpiece in a matter of seconds. Edible ribbons, made using the FMM multi ribbon cutter, were also popular as they cover a multitude of sins – fantastic when you are learning to decorate cakes!

Please to hear you enjoyed my wonky cakes dvd. Regards covering ball cakes, these are the most challenging of all cakes to cover! Instructions and step by step photos are in my cakes to inspire and desire book – the Moth orchid cake. Eventually I plan to include covering ball cakes on a dvd but I’m afraid you’ll have to wait a while for this!

As a beginner I am trying my best to finish off my cakes to the best of my ability and learning by trial and error, but I still can’t get the professional look. How can I get a clean finish on my decorations and cake when they have gotten icing sugar on them from when I have been rolling the sugarpaste out?
I seen a tip which said,lightly brush down with a damp paintbrush. Is this the best solution or will it affect the icing?

When you have my DVDs you’ll see that I don’t actually use icing sugar at all! I smear my work surface with white vegetable fat and roll out my sugarpaste on this, see my blog post on using white fat. I wouldn’t recommend using water on sugarpaste to remove icing sugar – when the water dries the texture and finish of the sugarpaste will look different to the unpainted areas!
