Decorating cookies is always so much fun and Friday’s class was no exception.
“I could do this all day everyday” was one students comment!
The cookies that we decorated were all inspired by summer so first up was a pair of flip flops – there are so many possibilities with these, but as this was the first cookie everyone was to decorate I kept the decoration as simple as possible.
Any one for ice cream? This was a big hit, contrary to normal advice the trick here is not to knead the sugarpaste and to pull the paste apart to create a rough texture and to use this to create the ice cream.
By the time we moved on to decorating the swimming costume cookies everyone was feeling a lot more confident and a lot more experimental. Most people had a go using one of my stencils and I hope you agree that our afternoon as swimsuit designers was well spent.

“Firstly I would like to thank yourself and Lindy again for a fantastic day yesterday, I thoroughly enjoyed myself and learnt loads.
Could you pass on a message to Lindy for me and let her know that i had a second go at making the cookies and they turned out great. I managed to bind together the dough and baked the cookies to perfection!!
Going to spend the day tomorrow (Sunday) decorating them and then I suppose they will have to be eaten!!!!

I just found out about you and instantly love all your work on the cakes and cookies. They are so gorgeous and creative! You are just so talented! Too bad we are not in the same country or I would definitely be a student of yours!
I saw the Miu Miu shoes you made. How did you achieve the shape and such realistic looking high heels? Do you need a special mold for it? I’m truly truly curious! Does any of your published books show the technique to making this Miu Miu heels?

The Miu Miu shoe was made, with permission, from the real thing for an edible fashion shoot a few years ago. I made a mould of the shoe’s heel and then used this to made the sugar version. I’m afraid that I’ve not yet included a similar shoe in a book – its a little tricky and needs patience. I did however run a evening class to make similar lifesized shoes and the students that attended the class still talk about their shoes!! Perhaps I ought to show such a shoe in a future book or DVD……

Hi there lindy, i was wondering if you could help me my friend wants me to make her 100 daisy cookies for favours at her wedding, can the cookies reciepe be frozen and for how long, i’m going to invest in you Bake me I’m yours cookie book in the morning, could you also tell me , would i use the same cutter on the icing for the topper as i would have used for the cookie? does that make sense?

Yes you can freeze the cookies, ideally for up to a month, and yes you do use the same cutter to stamp out the cookie and the icing – hope you enjoy the book
