If there’s one style that, to me at least, epitomises Lindy’s style it’s ‘cutwork‘. The iconic ‘cutwork’ wonky cake is, in my opinion, her finest example. Take this concept one step further… a mini ‘cutwork‘ cake and voila you have something quite special indeed! I love little cakes. Dainty and pretty. Perfect for one or two… sometimes you just don’t want a big cake. As we tighten our belts and think more along the lines of ‘make do and mend’ & ‘waste not want not’ a mini cake makes the most perfect treat for 2010. And Lindy’s mini cakes are very perfectly gorgeous!
On this course you will learn about how to bake the perfect ‘mini’ cake for covering and decorating. Lindy has superb recipes, these coupled with Jane’ s top tips on baking on our blog – you can’t go wrong!! Lindy will take you through the basics of handling sugarpaste and covering your cakes. Lindy will then move on to the cutwork part of this course. Using cutters for the shapes and piping for the finishing touches, these lovely little gems start to come together. The rest is up to you. And as you can see from the various styles and shapes the design possibilities are endless. Lindy always encourages her students to experiment and find their own style. She has marvellous tips on colour and shape but is keen for her students to interpret these in their own way. The excellent thing about mini cakes is that you can experiment more than once. And you get great ideas from other students. You truly take a lot away with you on a Lindy’s course!
