It’s so exciting my ‘Contemporary Cake Decorating Bible’ is here! It’s big, it’s heavy and it’s jammed packed full of techniques to try and ideas to inspire. Just had a first look at your book, it arrived today. Can’t wait to try out the patterns, they look so pretty. I know the book is no replacement for your hands on classes, but living across the sea, it’ll have to do. On first glance it looks very very promissing. Can’t wait to get started! Hello! I am planning to attempt the fab cushion stack cake for a friend’s birthday party. The cake will have to travel 300 miles in the car down the motorway, and I am worried about transporting the stacked cake in case one of the tiers falls off, especially the top one, as it sitting only on a 3 inch cake board. Will the royal icing be strong enough to hold it together safely? Please can I have your advice on whether the cake is transportable fully stacked. My worry about assembling it after transportation is in case the royal icing which sticks the tiers together doesn’t have time to set properly before the big event. (How long does royal icing take to set properly? Can I transport pre-made royal icing on a 6 hour journey and it still be ok to use at the other end?). I would appreciate any advice you can give. We would suggest that the cake will be fine to be transported fully stacked depending on how it is loaded in the car! We would recommend the cake is in a cake box and the cake board is placed on non slip matting so it does not move while being transported! The final decision is yours but we think it would be fine! Royal icing sets quickly, and pre-made royal icing can be transported in a cool bag or box!

Thanks so much for your advice. I will transport it fully stacked in a box with the matting (although maybe I will feel sick for the whole journey)! I have used the non slip matting before and it works a treat, under the cake box as well as the cake. That’s kind of you to ask for a photo. The party is in February, and I will definately send you a pic.

Sorry to bother you all again. Still in the planning stages of my cushion stack cake from the contemporary cake decorating bible. I can’t seem to find a cake board small enough for the top cushion. Is it ok if I cut a bigger one down to size? (I have a 4inch 3mm thick one I could cut). Would the cut edges affect the cake, bearing in mind this board needs to go between the sugarpaste and the cake? Should I seal the cut sides with something?
Completely unrelated question- I’ve been doing a bit of playing with confectioner’s glaze and have ruined a couple of paint brushes as I just can’t seem to get them clean after. Would you have any tips?

You would struggle to cut a board as they are very strong. We sell very small cake boards of 2″ if that is any help.
Regarding your paintbrushes – I am not sure how to bring them back to life if they have gone hard. You could try various strong cleaning products – if they are ruined already then you can’t hurt them! They need to be cleaned in hot water and washing up liquid straight away after using.
