I love getting ready for Christmas, so I was thrilled to be invited to demonstrate at the Ideal Home Christmas Show at Earls Court this year. As the show was hot on the heels of Cake International at the NEC, I agreed to just provide demonstrations on the Thursday of the show. Sooooo pleased I chose Thursday because it so happened that Laurence Llewelyn-Bowen was on stage before me – WOW what an honour!!! I’ve always admired his work right from the early days of ‘Changing Rooms’. Mind you I don’t think a black Christmas tree with gold decorations would look quite right in my house – it was very Laurence mind you and it was lovely to see him in action. If you are visiting the show over the weekend don’t miss Laurence’s ‘Sugar and spice’ and ‘Slugs and snails’ room sets – so many present and decorating ideas beautifully presented. My demonstrations were all about creating beautiful yet edible cookie crackers for your Christmas tree or table. I’m told the Christmas theatre seats 175 people, so it was very heartening to see so many friendly faces looking up at me, as well as the standing crowds…How lovely that so many people were interested in watching me turn a humble biscuit into a Christmas table centrepiece.
My cracker cookies were variations of the ones that appear in my new ‘Creative Colour for Cake decorating’ book. The same techniques just different cutters, embossers and moulds. I hope they let you see what else is possible using sugarcraft techniques on a cracker-shaped cookie.
Thank you to everyone who came up after each demo to chat and my apologies for cutting you short – there was only a 15-minute turn around between each demonstration, so I was a little pushed for time!!!! But good to know I inspired you and that you liked my powerpoint pictures – I just wish I had the opportunity to use this technology more often.

Hi Lindy, I was inspired by your demo to make the cracker cookies for Christmas! I’ve just made a batch of spiced orange cookies but despite chilling them for 40 minutes before baking and preheating the oven, they’ve spread so my fondant icing isn’t going to sit neatly. Do you have any expert tips for preventing cookies from spreading during the cooking process? Yours look so perfect 🙂 Very many thanks.

The cookies will expand a little but not so much that the fondant doesn’t fit neatly. Here are some cookie tips:-
*Use unsalted butter – spreadable butters/spreads can change the consistency of the dough.
*Mix dry ingredients thoroughly before adding the liquids.
*Do not over mix the dough as this will toughen it.
*Make sure you carefully measure your ingredients. Baking requires accuracy.
